Default Overheated checklist

I guess Im an idiot for thinking this would never happen to me... as I said this morning confidently that I wouldnt hesitate to take my truck anywhere.
04, 120k supposedly had the HG done at the dealer 2 owners ago. The truck has always run cool. Inline thermostat mod had it running 175-180 all the time. No rushing water sounds, it ran perfect. Got home tonight and left the truck running in my driveway so I could change a tire on another car using my lights. Finish changing the tire (15 minutes??) and I look over at steam pouring out from under my hood. 269* on the ultragauge I nearly sh*t my pants.
Im sure there are a million threads on where to start looking as to why it overheated, I just needed to vent. Ill start searching past threads tonight, or if anyone feels like repeating themselves, maybe you can post up a checklist of things for me to go over tomorrow morning.
