If you have to pass emissions inspections, you will not be able to delete the SAI. The existence of SAI is encoded in the vehicle's VIN.

Inline thermostat is a good option, much more cost efficient than machining the intake. I run them on all my trucks. If you have an non-SAI truck for parts and live in a state without emmissions that is a good swap, I would do the same.
