Put the front driveshaft in this evening. The rig now moves, the transmission shifts and the brakes work good.

Check out the Ashcroft CDL shift linkage. I installed it on my 2000 Disco 2 and really like it. No need to change out the SLABS unit.

Linkage is all mechanical.

Updating the SLABS unit is highly recommended if you add a CDL lever. The early SLABS programming does not recognise the combination of an activated central lock and traction control. The brake mapping is also slightly different in the later unit.

Is the '03/04 SLABS unit that you recommended for the '00 with a CDL lever a simple "plug and play" switch with the stock '00 unit?

Yes, although there may be options enabled in the new unit that do not apply to your vehicle. You may get one that is set up for air shocks but your truck has coils, for example. These settings can all be changed using a Nanocom, Hawkeye, etc.
