Only thing left off your list is starter, ignition coils and crank position sensor. All are pretty easy jobs and relatively low cost.
Have her check the coolant level once a week at least.
That takes care of the driving part, but what if a sunroof sticks open, or window sticks down? Pop the door panels off and grease the window regulator tracks - window problem sorted. Tell her not to use the sunroof while you are out, or pull the sunroof motors and do the full waterproofing.
