When it gets really cold my LR2 also does that but only for 1 second, definitely not as long as yours. I would think it is a combination of the cold weather and gasoline.

Maybe try adding an additive with the gasoline.

Just an update on the issue. It's definitely not the battery or a cold start since the temp went up. I've now notice when it happens, is when the fuel is below half a tank and worse when close to empty. When I fill up the tank, I have no issues with the start till it dips below half a tank.

Any ideas if it could be the fuel pump?

the fuel pump is another issue with these cars (right up to MY 2011).
I had mine changed under warranty at 50 000 km (MY 2010). it would read empty at a quarter tank..
its a known fault of these saddle tanks, and involves a new sender unit and pump...
