Asheville NC fits everything on that list, except we do have some oak trees... nothing like Florida. though. I love it here. Mountains, rivers, fishing, trails, 4 seasons.
Just stay away from the hippies and its a great place to live. If you love the outdoors, you literally can't be bored in AVL.

Bend, Oregon would be my choice if I could live anywhere. You've the Deschutes and Metolius at your backdoor and the fabulous Umpqua only hours away, the Cascades Range is RIGHT THERE too (which gives a "rain shadow" effect that makes the climate really nice). The remote and rugged John Day area is within an easy drive, regional airport in Redmond, Portland less than three hours. Crater Lake, the Columbia River gorge, deserts and mountains and rivers and lakes and a not-too-outrageous cost of living at a good standing...what's not to like Not to mention Columbia Overland is based there too.

I like where I already live in Colorado but I think Cortez, CO in SW Colorado would also be a good place. Being in the center of the Four Corners area there are great places in all directions from Cortez and not very far away. Not a very exciting town but if your emphasis is on the outdoors and plenty of it then this is a great central location for anything and everything outdoors oriented. I've also always liked quiet, tiny Hanksville, Utah in the middle of the lonely/isolated Utah desert but having great access to fantastic places in all directions. Being not a gregarious person Hanksville appeals to my loner instincts. A small house there would appeal to me but I'm sure not to my wife. All I've ever required is a gas station, a grocery store, and a library if I had no money worries.
