I had a rattle like the one you're talking about. I thought the torque converter was going bad. A few weeks later the bearings in the x-fer case got so hot that the truck wouldn't move. I'd suggest at least pulling the fill plug and sticking something in there to see if it's full. Those inspection plates are known to leak.

+1 on that. Transfer case can cause a rattling sound.
Also do you have heat shields on your cats? Presumably you would have caught a rattle when tapping them with a mallet, but the welds for the heat shields can get loose.
One comment you made concerns me. About the u joints. Some movement and assume it is normal. That could be the issue. Mine don't move at all. They did at one time and I removed the front one to find that the needle bearings were almost gone.
Also, I have had to replace cats and the rattling sound they made (both) did not replicate with a mallet.
