Default Thermostat or coolant temp sensor? - slow to warm up

In cold weather car takes a bit long to heat up. When temp is at around 15F i can drive 12 miles -doing 55-60 and temp will be only 1/4 of the way.

How do i know if it is thermostat or coolant temperature sensor?

ONce coolant temp is up to where it should be - it stays there without overheating

looks like autozone has them dirt cheap: $3.99 - valucraft or 6.99 - duralast
Does anyone knows if it would be beneficial to get one that opens at lower temp? OEM is 190F, autozone have some that open at 180F and 160F

Run the original temp, that's where it's gonna run right and what it's designed for.

Run to cold and your MPG will suffer.

I tried the 160, now have the 180, mpg 15 - 17 depending on conditions, but I'm in a warm summer climate and flat for 100 miles in every direction. If you bought is used, it might not have a thermostat, some people take that out if they have an overheating problem....
