I bought new hoses when we dropped in the new engine, but at this point I'm ready to cut my losses on it.

The Rover is in St. Louis, but getting shipped out to Oregon by the end of the year. Once it gets out here I'm going with an inline stat to see if that fixes the issue, and I think it will. If it does fix the issue then I'm sure my wife will want to keep it. If it doesn't, then who knows what'll happen.
