Right now I'm leaning towards the standard (20mm lift) springs, figuring if the weight of the bumpers bring it down it should still sit just over stock height. A buddy of mine made the comment of "Seems like you need a happy medium and it's not there.. Either not quite enough or too much.. Where's that 30mm Coil when ya need it"

There is also a big difference in the steel bumpers out there: some are not much heavier than stock. Some have added nerf bars and brush guards and some are very basic. Sounds like you need standard replacement and if you need to balance out the height: there are different spring cushions and spacers available to make those adjustments.

There are a few suppliers here that offer good deals on kits and provide excellent insight on what might be necessary for your application. One advertises in the classified section with daily deals and will often list a 2" medium duty kit at an excellent price.

As Best said, spacers are not the right way to correct for added weight. You need stiffer springs; not longer ones.

Honesty if you are adding those basic britpart front and rear steel bumpers get new stock springs.

This reinforces my thought of getting the Standard lift(20mm) springs and if the weight sags them it would be back to around stock height.

I am a big supporter of real suspension lifts.
