Temps after a new head gasket?

Thermostat is brand new(had it changed when they changed the head gasket) System flushed and refilled with NON-Dexcool global coolant. Electric fan comes on around the 200f range. System air-bled , hoses are firm and hold pressure.
What worries me is that my temps are probably spiking around 225 once i shut the engine off. After spending 2500 on a head gasket job, i'm overly paranoid.

A moment please. Temps are at somewhere before you shut down, then increase to 225 once rotation of the engine is reduced to 0.0000 rpm, and water flow is reduced to 0.0000 gallons per minute. It would seem normal to increase in temp when forced water flow and forced air flow is cut off. Then cool back down. I also "discovered" that exhaust manifolds have similar properties and can leave a mark. The D2 is supposed to switch on that electric fan if:
after 10 seconds after key off, the intake air temp sesnor says it is 140F AND coolant temp is 230F.
After 10 minutes, the fan cuts off to conserve battery, or earlier if engine coolant returns to 212F.
So if this is after you turn off the truck, it is expected by physics and Rover is not worried about it unless coolant temp is 230F and IAT is high. So you could have a cold day, wind chill, and an overheated engine and Rover won't turn that helper fan on.

Bled the system again using the elevated expansion tank method. After i started nosing around under the hood,Drew (the formerLR2001Silver) and i discovered a massive oil leak at the front of the valley pan seal. So back to the shop it went. They assured me they're going to reflush the system and check the thermostat while they redo the head gaskets and valley pan gasket So we'll see what happens.
