Default Oil dip stick

Any one dip stick give false readings? My 04 always show that its at the minimal mark if left for a day or two. Dont seem the be burning anything though. Put more oil in and it goes over the high mark. Coolant good and stays at the right mark. Its a 04 with 36,000 miles

Do you check it the same way every time?
If you check it after driving one time and then after sitting for a day or so the next time your readings will be different.
