Could be many things.
When the temperature of the coolant is low, or cooler then slightly warm, the ecu will go into cold start enrichment mode and do it's crank rotation count while enabling the fast idle controller and fuel enrichment (wider pulse width for the injectors). I don't know about two minutes, but this usually takes less than 25 seconds for it to idle down, unless it's REALLY cold. So, the culprit may be a soiled fast idle control valve, or possibly a defective temperature sensor throwing the ecu into default mode since it can't make proper calculations to control the amount of air it bypasses for idle speed.
